The Rockwell Hardness scale is used to measure the hardness of materials, usually steel, and while it might seem like the harder your knife blades the better, there is a delicate balance involved. If a knife is too soft it will be unable to cut through the items you want, but conversely, the harder a knife is, the stiffer and more brittle it is, making it even more susceptible to wear and breakage.
